What does Colombia Supremo mean?
Supremo is not a coffee variety and is not an independent quality certification. It is a classification based on bean size. Colombia Supremo generally refers to larger beans, commonly screen 17/18. Excelso usually refers to a smaller screen-size classification.
Bean size is useful information, but it does not determine flavour on its own. Origin, variety, harvest, processing, drying, roasting and brewing all matter. That is why we describe this coffee through its Huila origin, altitude, processing, body and confirmed taste profile as well as its Supremo classification.
How to brew it as espresso
Use the dose that suits your basket. As a Colombian coffee for espresso, this bean works well in both a portafilter machine and a fully automatic machine when you adjust the grind to your recipe. A double espresso is often brewed with approximately 16 to 20 grams, but your machine and recipe are decisive. Start with a fine grind and aim for balanced extraction. If the espresso tastes thin, sharp or watery, grind a little finer or extend the extraction. If it tastes bitter, dry or heavy, grind a little coarser or shorten the extraction.
Change one variable at a time. If you alter grind size, dose and brew time together, you will not know what caused the difference. Weigh your coffee and espresso when you first dial in the coffee. It is quicker than guessing every morning.
How to brew it as filter coffee
For filter coffee, you can start with approximately 60 grams of coffee per litre of water. For 250 millilitres, that is approximately 15 grams. Use a medium grind and fresh, clean water. If you want more body, grind a little finer or increase the dose slightly. If you want more clarity, grind a little coarser and allow enough brew time.
Colombia Supremo also works well in a cafetière. Use a coarse grind and give the coffee enough contact time. The longer extraction brings out the full body. For a cappuccino or flat white, you can brew the espresso a little more concentrated so the chocolate and hazelnut notes remain recognizable alongside the milk.
Fresh roasted at Eddy's Coffee
Freshness is not a marketing detail. Roasting creates aromas that gradually change in the weeks afterwards, so we roast this coffee fresh at Eddy's Coffee. Coffee also needs time to release gas after roasting. For espresso, it can be helpful to let the coffee rest for a few days before you make final grind adjustments.
Store the beans airtight, dry and away from direct sunlight. Ideally, grind only the amount you need. If you use a fully automatic machine with a reservoir of up to 250 grams, that is practical; just avoid leaving the reservoir open and warm for a long time.
